Default Armenian Hand-Rolled Sausages (easy)

This is an easy recipe that I found in Frugal Gourmet's "Our Immigrant Ancestors" (and just now, online, so I don't have to type it all).

These were particularly good with tzatziki and baba ganoush (also Frugal's recipes that I have made many times).

We also had homemade pita bread and storebought hummus.

A fun meal!


Armenian Hand - Rolled Sausages Frugal Gourmet
(Luleh Kebab)
What You Need:
2 pounds lean ground meat, half beef and half lamb
1 tablespoon tomato paste
cup (4 ounces) tomato sauce
1 cup bread crumbs
cup (4 tablespoons) evaporated milk
1 teaspoon ground cumin
cup minced parsley
1 tablespoon minced dried onion
1 teaspoon salt
Freshly ground black pepper to taste


1 cup peeled and minced yellow onion
cup minced parsley

How To Cook:
1. Mix the ingredients, except garnishes, together. Roll mixture into balls just smaller than a tennis ball, then form into sausage shapes about 1 inch by 4 inches long.
2. Moisten hands with water to facilitate shaping. Place the kebabs in a shallow baking dish.
3. Bake 20 minutes in a preheated 400F oven. Transfer to a heated platter and reserve the pan juices to serve separately, first spooning off the excess fat.
4. Garnish the kebabs with the chopped onion and parsley.
