Dijon Beef with Mushrooms (crockpot)

My manager's husband made this recently and my boss brought me a container of it for lunch. Loved it!

I made it myself - delicious! But next time I won't cut the meat in such small pieces.

Dijon Beef with Mushrooms

2 pounds lean beef or stew meat
large package sliced fresh mushrooms
6 cloves garlic, minced
1 cup beef broth
1 T. red wine vinegar
1 T. soy sauce
3/4 cup sour cream
jar of roasted red peppers (I used a large one), chopped
2-3 T. Dijon mustard
Salt and pepper to taste

Shake chunks of beef in a bag of flour. Place mushrooms on the bottom of the crockpot, then place floured beef on top. Add garlic, beef broth, vinegar, and soy sauce. Cover and cook on low, 6 to 8 hours.

Stir in red peppers, sour cream, and mustard. Stir and heat through.

Serve over egg noodles.

I bought a pkg of two 3 lb chuck roasts at Sam's the other day. I used one for Mississippi roast. I may try this with the other chuck roast. It sounds and looks rich and delicious.

Do you mean one large jar of roasted red peppers or one large roasted red pepper?

Cooksie, I meant a large store-bought jar of roasted red peppers.

I think the chuck roast will be a good choice for this dish. Let me know how yours turns out - I have a chuck in my freezer.

I made this again, but used just 1/4 cup of fat-free sour cream and served it over steamed cauliflower.

Wonderful!
