Harvested my first mini eggplants (2 kinds), Roma beans, and tomato last night.

Used my parsley, sage, rosemary and thyme (sing it!) along with lemon, olive oil, red pepper flakes to marinate chicken paillards.

Grilled the eggplants and chicken.

Delicious meal!

I don't know yet.
Last night I ended up going out for Mexican with my oldest son and Granddaughter.
Had a big margarita too.

I love frozen watermelon Ritas. Wish I could have one but hub complains. :sad:

Peep, I'm hooked on these Outshine Fruit Juice bars - been having one before bed every night lately. 60 calories.

I've tried the lime, lemon and watermelon - all great (lemon is my favorite). Will try pineapple next week.

We're having fish fried in cornmeal batter and grilled corn on the cob.
Not sure what else.

Didn't grill the corn as planned.
The tilapia was wonderful, seasoned the cornmeal with paprika and cayenne pepper.
My son made a great tartar sauce too.

We're having ice cream and berries for dessert.

Today was Mrs. "T's" Pierogi fried in lots of onions, and served with sour cream.

Yesterday, my supper was a little tin can of fishes in olive oil, and
bread to use as a pusher!......

I love sardines Jimmy.
In olive oil, tomato sauce, mustard sauce.
That used to be a regular camp lunch for me and Steve, on crackers.

Dinner last night was shrimp and tasso Henican, a dish from Commander's Palace in NOLA. Eh, too much vinegar/pickled items for me and WAY too spicy. Craig kind of liked it. It was a PITA to make with all the components so never again.

Great meal; that just about no one, will ask to share your sardines.
Same as anchovies on pizza, or liver.......

I also love the canned mackerel, and smoked King Oscar Kippered Herring.

Lol that's right.
I don't know a whole lot of people who like sardines.
I can eat anchovies, but don't normally.
I love liver if prepared properly.

As for tinned kippered.. I like the Polar and Brunswick brand best.
In the UK I found the bestest in the westest was John West brand for all things tinned and fishy.

The Brunswick are good too. Never had Polar brand.

2 funny stories.....
1. My grandfather loved sardines ( the ones you opened with a slotted key.)
He ate them for the last time in his life, when he found a piece of a finger, with a nail still on it. Gross@!

2. I told Tina I only like sardines with the skin and bones. She found some sardines at the dollar store, and I was amazed at the size of the can.??Hmm??
I opened the can ( can opener can only ), and the fish were huge.
They were good, but 2 or 3 fish of the approximate 8 in the can, had the scales still on them. It would be no problem, if I was a seal, but it was weird trying to swallow those scales. Tina was running and gagging......

Fried chicken and wild rice/buttermilk waffles with pink peppercorn/honey butter, maple syrup with horsradish and creole mustard. Collard greens on the side.

I have the exact corn dishes but in white (I also use them for chili dogs LOL). I can't use my nice OXO corn holders with the dish because they are to fat around. I cook my corn steamed either in the microwave or my Instant pot. I scored white corn a few weeks back. Man was that sweet as sugar.

WOW! This looks great. I’ve never heard of Wild rice/buttermilk waffles and the add-ins for the butter and syrup are interesting. Can you post all the recipes please? Or the links. TIA

In between the okra? Yes, that was shrimp. It had a piece of tasso placed where the vein was and then had a light dredge of seasoned flour.
