Default Cayenne Peanut Butter cookies

I rarely bake, but had some extra time this afternoon and tried this recipe from my archives. I got it on the internet and adapted it a bit.

I am a wuss about spicy heat, so I just used a HALF TEASPOON OF CAYENNE, and a half teaspoon of ancho chile powder (mild heat, sort of raisin-y). Some of you chile-heads might like it hotter.

Made half the batch with chunky peanut butter and the other half with creamy (I have a friend who doesn't like nuts).

Nine minutes in my oven made for softer cookies; ten minutes made them crunchy.

These were pretty good - mild heat was just right.

Might try them again with chocolate.


Cayenne Peanut Butter Cookies

1/2 cup (1 stick) butter, softened
1 1/2 cups brown sugar, packed
1 egg
1 T. Vanilla
1 cup chunky peanut butter

1 3/4 cups flour
1 teas. cayenne pepper
3/4 teas salt
3/4 baking soda

Preheat oven to 400 degrees. Grease cookie sheets.

Cream together butter and sugar. Add egg and vanilla and mix. Add peanut butter and mix well.

Mix flour, cayenne, salt and baking soda together. Add into wet mixture a little at a time and mix well.

Form dough into 1 inch balls and place on greased cookie sheet, no more than a dozen on each sheet. Use a fork to make a criss cross pattern on the top of each cookie.

Bake 8 or 9 minutes for chewy cookies, or 10 minutes for crispy cookies.

Makes about 3 dozen cookies.
