Vera's Pork Short Ribs with Oktoberfest Ale

Rub the ribs with paprika, brown sugar, cayenne, granulated garlic, oregano, a tiny bit of ground coffee, salt and pepper. Let sit for 12 hours (at least).

Preheat the oven to 300.

Melt 1/2 stick of butter in a large cast iron skillet. Caramelize 2 diced shallots. Add the ribs and brown on both sides. Deglaze the pan with a bottle of Sam Adams Oktoberfest Ale.

Put the pan in the oven, bake for 3 hours, adding more ale if everything evaporates.
