Walnut Oil Vinaigrette

I did this last night on some sliced cucumbers, red onions and tomato salad.

Walnut Oil Vinaigrette

4 tsp Dijon mustard (I mixed 2 tsp of Dijon with 2 tsp of Spiced mustard)
4 tsp honey
1 large clove garlic, minced
1 T of fresh basil (optional)
1/4 cup red wine vinegar or sherry vinegar (I used sherry)
2/3 cup walnut oil
Salt and freshly ground pepper

In a small bowl combine mustard, honey and garlic; stir in vinegar. Gradually whisk in oil. Season to taste with salt and pepper.

I bought some walnut oil several years ago, because it just sounded good. I haven't opened it.

You think it's okay? I'd love to try your dressing, joe!

I don't know what the shelf life is on oil though it keeps a long time out of direct sunlight. I suggest you open the oil and taste a bit of it, if it tastes like walnuts then odds are it is still good.

I picked up a bottle as I never tried it before and it has now become a regular oil purchase for me with olive, peanut, and canola. I'm also big into vinegars with several different kinds on hand all the time.

I figured that, I did marry one 44 years ago come February so I've kind of learned to understand them. :yum:
