Lunch for hub and I was scrambled eggs cooked in a small amount of butter served with tomatoes dressed with fresh basil, ground sea salt, ground peppercorns, garlic powder, onion powder & dry chili pepper infused EVOO.

I'll bet those eggs tasted wonderful along with the tomatoes, Peeps. Nice job on the scrambled eggs - they look perfect. And Mama- great technique on the eggs in a hole, and I spy some delicious-looking ham on the other side of the plate.

Brunch for 3: Ham, mushroom, onion, egg & cheese omelet (diced Country ham (leftover from last night), sliced mushrooms & onions sautéed in butter & hot chili pepper infused EVOO. Heat lowered to medium high. Eggs scrambled with sea salt, ground peppercorns & ½ & ½ added to pan. Bottom of eggs allowed to set then edges lifted to allow raw egg to flow underneath set eggs. When only the top slightly unset layer is left shredded cheddar is sprinkled down the center and pan is covered and removed from heat. Allow to steam a bit to finish setting top layer and cheese to melt. Fold one side over to middle and cover the cheese, slide onto plate and fold other side over. Top with additional cheddar and cover briefly to melt.)

We may be having eggs again tonight with ham and/or bacon maybe with pancakes or waffles. My daughter wants pumpkin waffles.

We had waffles. Not pancake batter in a waffle iron. Real Belgium waffles made with yeast batter!

I get a lot of requests for this.

What you will need (For two or three)

Eggs - Two for each person.
Red potatoes, small - four or five.
Onion - 1 medium
Salt to taste
Basil to taste
Fresh ground back pepper to taste
Pinch of crushed red pepper to taste
half a pound of small breakfast sausage links.

What to do

Cut the potatoes into small cubes, about 1/8 inch.
Gut the onion into similar size pieces.
Put some canola oil in the bottom of a cast iron frying pan and heat.
Add a pat of butter for a bit of flavor.
put the potatoes and onions in.
Salt, pepper, red pepper and basil to taste.

At the same time you start the potatoes, start browning the sausage.

As the potatoes and onions start to brown, cut the sausages into about quarter in slices and add to the potatoes.

As the potatoes are nearly done start frying tow eggs.

Pu the potatoes on a plate, I use a salad plate.

Put the eggs on top of the potatoes.

Last thing I do before eating is to take my fork and drill through the yolks letting that mix with the potatoes, onions and sausage.

Thank you all. It has become an at least once a weekend breakfast here. I have been looking at some 5" cast iron skillets to plate it a bit more attractively.

Scrambled eggs with browned sausage, sautéed veggies: red & green bell peppers, onions & mushroom (cooked in butter & chile oil) & a dollop of hot pepper paste on the side.

Nothing special, just eggs and hash... I LOVE HASH!
That is homemade hash. The girlfriend is long gone, but
her recipe, which was great, remains!

Edit to add: Golly there is some good looking food here, now I am REALLY HUNGRY.
