SPICY MEATLOAF

1 pound lean ground sirloin
8 ounces Pomi Brand strained tomatoes (or any tomato puree')
1/2 cup tomato sauce
1 cup chopped onions
1/2 cup bread crumbs
5 leaves fresh basil
1/3 cup sliced olives with pimiento
2 tablespoons Spanish paprika
2 tablespoons minced capers
1 1/2 teaspoons chopped fresh oregano
1/2 teaspoon ground coriander
2 egg whites
1 clove garlic, minced
Salt
Pepper
Crushed red pepper
Cooking spray

Preheat oven to 350°.
In a bowl season the Pomi strained tomatoes with salt, black
pepper, and crushed red pepper to taste.
Combine ground beef, tomato sauce, and remaining
ingredients except cooking spray in a large bowl.
Shape mixture into a 9 x 5-inch loaf on a broiler pan (or pyrex)
coated with cooking spray. Spread remaining 1/2 cup tomato sauce
evenly over top of meat loaf. Bake at 350° for 45 minutes. Let
stand 10 minutes before slicing.
