I love cheese and have a big slab of this blue veined sheep's milk cheese left over from Christmas.
What would you do with it? Any suggestions gratefully received.

I crumbled it over salads all the time.

I also make a blue cheese butter to serve with steaks or filets.

Blue cheese
Butter
Pepper (the cheese is already pretty salty)

Optional (any or all):
Shallots
Garlic
Herbs
Scallions

Smoosh it all together. Form it into a log and wrap in plastic. Chill.

Slice it to serve.

My neighbor makes that, SS, and uses it to top her steaks.

She also puts a ball of it in the middle of her burgers.

Eat with fruit(apples/pears)and enjoy with a nice glass of port.

Wow, I haven't seen anyone suggest drinking port as an apertif in a long while. I'm with you! It's nice. An acquired taste, but nice, especially on cold nights.

I am telling ya, a swig of port and a decent blue, best salad dressing ever, lol.
