Cheesy Sausage Soup

1 large onion, chopped
1 cup chopped celery
1/4 cup butter
1/4 cup all purpose flour
1 teaspoon dry mustard
1 Tablespoon Worcestershire sauce
2 cups chicken broth
2 medium carrots, chopped (about 1 cup)
2 large potatoes, peeled & cubed (about 3 ccups)
3 cups milk
3 cups shredded sharp cheddar cheese
(about 3/4 pound) plus 1/4 pound for garnish
1/4 teaspoon pepper
salt (optional) to taste
1/2 pound kielbasa sausage, cut into 1/4" slices

In your Soup Pot, Sauté onion and celery in butter 3-4 minutes or until soft. Stir in next three ingredients. Cook, stirring, 2-3 minutes or until vegetables are evenly coated and
mixture is bubbly.
Stir in next three ingredients.
Add kielbasa sausage. Bring to boiling.
Lower heat; cover; simmer, stirring occasionally, 25 minutes or until potatoes and carrots are tender.
Add milk. Cook over medium heat, bringing the soup to ALMOST boiling; do not boil.
Reduce heat to low; stir in cheese until melted.
Add pepper and, if you wish, the salt salt.
Ladle into heated soup bowls.
Garnish with extra cheese.
 
Top
