eggplant stew

-sm. eggplant, large dice
-can of Great Northern beans, undrained
-portabella, sliced
-cubed button mushrooms
-small can of petite diced tomatoes + 1 can water
-very small can of tomato sauce
-minced garlic, 2 cloves
-salt of your choice/pepper/sage powder/oregano/fresh basil
-1 lemon, juiced

toss into pot together & stir frequently. when reduced & thickened, test veggied for doneness.

some possible variations: use navy or cannelini or a blend of dark & lt. kidney beans; double the beans, add minced cooked onion; a few dashes tabasco; cubed tofu; garnish with a chiffonade of basil.....
