I have not cooked much in the last few days but today I made fried chicken two ways.

I cut up a chicken, cut the breast into boneless, skinless strips and the rest in fried chicken pieces, marinated all of it in water with salt, thyme and brown sugar, then in buttermilk, finally breaded the strips with panko, garlic powder, salt and pepper and a tiny bit of curry and fried them. I breaded the rest with flour and corn starch plus thyme and garlic powder.

Norm, were they deep fried or pan fried?

They were deep fried. I needed to deep fry the chicken fingers, then went ahead and deep fried the rest even though I usually pan fry regular chicken. The ones with corn starch turned out extra crunchy.

I am totally blown away by all the beautiful dinners tonight. We had meatloaf, green beans, roasted potatoes - not really pic-worthy, but tasty.

Thanks, Sass for the comment about dear Milo...that is a picture of him yawning, BTW, not being fierce. In spite of all those sharp teeth, he has never bitten either of us. Just opossum kisses.

Yep, he is a sweetheart. We've had him for a year now...poor opossums only live about two years, so he's gettin' up there. We feel lucky to have him. Thanks.
