Mint Sandwich Cookies

1 cup butter, softened
1 cup sugar
2 egg yolks
1 1/2 teaspoons vanilla
1/2 teaspoon peppermint extract
2 1/4 cups all-purpose flour
1/2 cup finely crushed starlight mint candies
1/4 teaspoon salt


7 (1-ounce) squares semi-sweet baking chocolate,
melted Crushed starlight mint candies.
mix your butter and sugar in large bowl. Beat at
medium speed until well mixed, then add egg yolks, vanilla and peppermint extract.
Continue beating, until well mixed.
Reduce speed to low. Add flour, 1/2 cup crushed candies
and salt.
keep mixing and scraping your bowl , until well mixed.
Divide the dough in two. Wrap in plastic wrap and put in refrigerator
for about 1 hour. preheat the oven 350°F.
Roll dough on floured surface use 1 1/2-inch cookie cutters.
Place 1 inch apart onto lightly
greased cookie sheets.
Bake for 6 to 10 minutes or until edges are lightly browned.
Let stand 1 minute; remove from cookie sheets. Cool
completely.
To put cookies together put
1 teaspoon melted chocolate on bottom of one cookie; top
with bottom of another cookie. Repeat with all cookies.

Decorate any way you wish... roll in chocolate...and nuts..or more candy.. have fun!

I'm sorry... TNT is tried and true...

Meaning that I"VE really made these.

I've had them. But I have not made them myself

Is there a Tread that has all of these Cooking-Related Abbreviations in it ?? There should be, so people like me can kinda "fast track" it to the basic "inside lingo" without having to ask about each one individually.

Not a bad idea!

I love chocolate and mint together, strange enough though DW doesn't!
I'll make em anyway!! LOL.
