Zucchini, Tomato and Feta Salad

Ingredients:

12 oz. Farfalle pasta
2 T olive oil
1 whole lemon (more to taste)
salt/pepper
2 whole zucchini, diced or cut into small wedges
Grape tomatoes, cut in half (as many as you like)
1/4 cup minced parsley
6 oz. crumbled Feta cheese

Preparation:

Cook pasta, drain and rinse in cold water. Place in bowl and add oil, lemon juice, salt and pepper and toss to cover pasta. Add the zucchini, tomatoes and parsley. Stir to combine all ingredients. Add half the Feta cheese and mix it in. If you need more moisture add additional lemon juice or oil to taste. Add the other half of Feta on top.

Chill for at least a couple hours.

I was trying to think of what I'd rather have in there besides zucchini, and I do believe you've hit on it!

No, no, Lee.........you have to have the zucchini!! It makes the salad. You have to try it to believe it. It's unbelievably good. :beer:
