Éclair Cake


1 cup water
1 stick butter
1 cup flour
¼ teaspoon salt
4 eggs
2 pkgs instant French Vanilla Pudding
1 8oz. Cream cheese (soft)
2 cups milk
3oz chocolate chips
1 cup confectioners sugar
12oz Cool Whip


Bring water to boil, add butter. When butter melts, add flour and salt. Stir vigorously until dough leaves side of pan. Cool slightly. When cold, add eggs one at a time, stirring completely after each addition. Spread dough into a 15 x 10 1 jelly roll pan. BAKE at 400f for 35 minutes. Cool pastry shell. Break any large bubbles with a fork.
In a separate bowl, combine instant pudding with cream cheese and cold milk. Beat mixture until smooth. Spread pudding mixture on the cooled shell. Spread Cool Whip over pudding.
In a small saucepan melt 3 oz chocolate chips and 1 tablespoon butter. When melted, add 1 cup confectioners sugar, alt with a little milk. Frosting should be of drizzling consistency. If too stiff, add a more milk. Drizzle over the top of cake.
Chill at least 1 hour before serving. Cut into squares. Serves 15-20. Unless party includes Kevin and Fred Konchan. Then, it will serve 3-4.

Sounds good....and just about sinful. ummmmmm

It reminds me of one I'll have to dig out. It's called dirt dessert. It uses vanilla pudding also.
