These were excellent!
I used four of my mini eggplants and followed Giada's recipe exactly for them.

For the ketchup, I took a cup of Heinz, added a plump minced clove of garlic, about a 1/2 teas. of Worcestershire, and about a dozen basil leaves, chiffonaded and minced. Refrigerated for maybe 2 hours. Excellent on our burgers, as well as dipping sauce for the eggplant fries.
I roasted the eggplant fries for 20 minutes. Crunchy on the outside, tender and creamy on the inside.
