Orange-Glazed Carrots
2 pounds fresh carrots, thick-sliced*
2 tablespoons butter
1/4 cup orange juice concentrate
2 tablespoons brown sugar
Place carrots. Add water to just cover.
Bring to a boil. Reduce heat; cover and simmer for 9 - 11 minutes or until crisp-tender.
Drain.
Melt butter in a large skillet; stir in orange juice concentrate and brown sugar.
Add carrots ** and stir to coat.
Cook over medium heat, stirring for 1 - 2 minutes, or until glaze thickens and carrots are well-coated.
*We are just two here, so I only prep one pound of carrots, but the other ingredients as is...
Mom added a couple of TBL of minced fresh parsley at this point...... we don't.
