Today will probably be corned beef for lunch.
Chicken (method TBDL) for dinner.

Same here with the lunch.
Dinner is going to be chicken kebabs on the grill.
I'm thinking chicken cutlets dredged in seasoned flour and pan fried in butter (and maybe a bit of bacon fat). Then lemon pan gravy, Knorr alfredo side and broccoli or green beans (steamed green beans dressed with salt, pepper, fresh garlic, lemon juice and EVOO).

Sounds good Peeps!
I've never grilled kebabs before but the weather is going to be perfect for it.
Got some recipes in the books on the shelf to go by.
Wish me luck! Lol

Did I go overboard? Lol

Just getting them ready to put on.
Decided steak too and pineapple.
Some have cherry tomatoes and onion chunks.
There was another cookie sheet full, those are already on the grill.
Did 24 skewers in all.

My plate.
So delicious!
Only seasoned with Lawry's and Rub Some Chicken.
I used some Rufus Teague sauce for dipping.

this is a center pork loin - 1 lb size - done @ 225'F for 2.5 hrs
salted / peppered at noon, wrapped in foil with sliced onion & mashed garlic.
the foil trick keeps it moist and tender.

fresh re-fried spaetzle and brussel sprouts (boiled then bisected then pan fried cut side down)

Still feeling lousy from this cold whatever it is. DD has caught it now and we didn’t want to cook. So we did Chinese take out.

Thanks, Lee.. and yes Chowdah, that does look delicious :)

Geez Peeps, sure hope you feel better today.

I'm thinking fajitas or quesadillas tonight from all the kebab leftovers.

Thank you Sass.

DD# 2 has been fighting this for over a week and a half. It will be a week tomorrow that I’ve had it. Now DD# 1 has just gotten it.

That junk made it's way through our family back in late October, then right after Thanksgiving.
I had sore throat and cough that lasted a while, the youngest Granddaughter ended up in urgent care for IV fluids.
I had my flu jab October 10.
Course we all know how effective it was.

You all take care!

Thanks so much. I can't honestly take credit for the flatbreads entirely though. A restaurant called Breo has them on their special appy menu in a slightly different form and I stole it with a few changes.

Had the first with just the meats and veg.
Second with sour cream and shredded cheese.

had shredded wheat for breakfast, so dinner was shredded beef (g)
this is a top round chunk; braised 4 hrs, cooled/chilled overnight; braised 2.5 hours - came apart with the tip of a knife. had trouble getting the chunks out of the pot - they were falling apart.
the gravy was (1) onions softened in fond/oil from searing beef (2) water (3) Better than Bouillon - which reduced, obviously. thickened a tad more with two lumps of pre-homemade dark roux to finish.
