Baked Tilapia with Chile Lime Cream Sauce

Fish:
4 fillets of tilapia
4 Tb melted butter or olive oil
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper

Sauce:
2 large shallots, minced
2 garlic cloves, minced
juice of one lime
1 tsp lime zest
1 tsp paprika
1/2 cup heavy cream
2 Tb cilantro, chopped
salt and pepper
red pepper flakes

Preheat over to 350 degrees.

Mix melted butter (or oil) with salt, pepper and garlic powder. Brush over all sides of fish. Lay fish on a greased pan. Bake 10 minutes or until fish flakes. Serve fish over a bed of rice with the chile lime sauce (recipe below).

In a small sauce pot, melt butter over medium low heat. Add shallots and garlic and brown slightly, approximately 3 minutes. Add lime juice, zest and paprika and stir 2 minutes. Add cream and stir. Let simmer stirring frequently 3 minutes. Add half of the cilantro (1 Tb.) and stir one minute. Add salt and pepper to taste. Spoon over fish. Sprinkle with remaining cilantro and red pepper flakes.
