I've cut one of those marinated Pork Tenderloins in half..... "Texas-Rubbed"...


Every time I make one of these, I let it in too long.... (Old Dog... etc.):fridge:

if you roast it whole, try 325'F and pull it at 135'F measured in the middle.
depending on where you cut it, it may have a tapered small end - that cooks quicker - so 135 at the mid point will give you a bit better done on the small and and slightly less done on the 'big' end.


our fav is to schnitzel-ize it.

Homemade yogurt with lemon curd for breakfast.
Wonton soup from last night for lunch.
Dinner should be Cornish hens. BUT ................................. one never knows. LOL

That 'ham' fried rice was the best thing ever!
It was actually small chunks of crispy pork belly.
Won't be the last time I go there.
Yummm!

Dinner was roasted Cornish hens, mashed potatoes, stuffing, steamed broccoli and pan gravy.

Breakfast was coffee and an oat and honey granola bar.
Lunch will be grilled ham and cheese.

Our apartment complex is having a bbq this evening in the back lawn area, nice folks that I've met so far!
-Bring a side and your own drinks-
The dogs and burgers are compliments of Caesar and George.

Funny it's Labor Day holiday but all the Laborer's have to work. C'est la vie

Tonight will be turkey burgers (for DD's), Beef burgers (for hub and I), Thumann's potato salad and a new recipe for me Tomato Salad Puttanesca (Thank you Lee).

I had a burger and some of the mac salad I'd bought at the store, some carrots and celery sticks with ranch dip and a piece of this lovely tomato and herb tart that a lady named Gigi made.
It was made from phyllo, had ricotta cheese, tomatoes and herbs.
The way she had it scored and puffed along the edges reminded me of Peeps cherry dessert.

It's bloody hot, then it started storming, some moved under the veranda on the patio.
I just excused myself, thanked them and walked back inside lol
Good food though.

-Brekkie was peaches and cream oatmeal, toast and an orange.
-Lunch will be fried egg on buttery chive rice.
-Dinner may be mac and cheese with salad.

Last night I smoke baked an Alaskan coho salmon fillet bought at Trader Joe's and excellent. I used alder for smoke. The patio salad was made at Fred Myer's (Kroger) and doctored with celery, onions, red sweet pepper, and yellow mustard.

Last night was a burger, homemade pickle chips, Thumann's potato salad, Tomato Salad Puttanesca (family liked it) and half a roll to soak up the salad juices.

I'm working 3rds tonight midnight -8am.
So, I'm going to make tuna cakes (like salmon patties) and whatever else is going to be good reheated.

Never did make the dinner last night.
I took cheese and crackers and yogurt to work with me.
DIL made herself a frozen pizza.
Tonight I am going to make them (tuna cakes)with 2 sides yet to be decided.

I like your soup, medtran!

Last night's dinner was a burger, steamed and buttered fresh string beans and Trader Joe's Pappardelle (tossed with sliced mushrooms and minced onion sautéed in butter then added to undiluted cream of mushroom soup and a splash of half & half).

Lucky and Peeps, both very nice dinners.
Now don't know if DIL will let me cook tonight.
I might still.
She feels bad if I've worked the night before then can't sleep when I get home.
Blame that on the 2 xl Columbian coffees I had at 4 this morning.
If I don't cook, I may suggest Chinese again.
The ham fried rice. With pics this time!
