Bleu Cheese Bacon Quiche
1 refrigerated pie crust (9-inch)
8 slices precooked bacon (about half a 2-ounce package)
16 ounces egg substitute
1/2 jar (8 ounces total) bleu cheese salad dressing
Heat oven to 350 degrees. Line a 9-inch pie plate with the crust. Cut bacon into bite-size
pieces; place it over the dough.
In a medium bowl, beat the egg substitute with the salad dressing until well combined.
Pour into the crust.
Bake 25 to 30 minutes or until puffed and a knife inserted in the center comes out clean.
Remove to a wire rack. Let cool 5 minutes before slicing.
Makes 6 servings.
