Shaffer Style Lentil Stew

1 cup dry lentils
1 cup sliced leeks or chopped onions
3 garlic cloves
1 tablespoons olive oil
4 cups beef broth
1 7 oz can can tomatoes, diced
2 tablespoons Worcestershire sauce
1/4 tsp dried thyme or oregano
1/4 tsp pepper
1 bay leaf
1/2 cup sliced carrot
1/2 cup sliced celery
1/2 cup smoked sauage

cook your onion and garlic in oil until tender but not brown.

Stir in lentils, beef broth, tomatoes, oregano and bay leaf and veggies.

Bring to a boil.

Reduce heat.
Add meat and simmer until lentils are soft.

Enjoy!!!!

Thanks for bumping this back to the top. Think I'll make some next week. It's going to be cold and rainy most of the week.
