Mushroom Rarebit

1/2 pound fresh mushrooms
6 T. butter
1 small onion, chopped
1/4 cup flour
1 cup milk
1/8 t. nutmeg
1/2 t. Worcestershire
Salt and pepper
1 1/2 cup shredded Swiss cheese, divided
8 slices bread
Chopped parsley

Slice mushrooms. Melt butter over medium heat and cook onions until tender.
Stir in mushrooms and cook four minutes. Sprinkle with flour and remove from
heat. Gradually blend in milk. Add nutmeg, Worcestershire, salt and pepper.
Return to heat and bring to a boil; simmer three minutes. Remove from heat and
stir in one half cup cheese. Toast one side of bread. Top toasted side with
mixture. Sprinkle remaining cheese on top, broil until cheese melts. Garnish with
parsley. Serves 4

This sounds excellent! As a little girl I use to love Welsh rarebit. I use to call it, Welsh rabbit. lol!
