SCALLION SOUP

Ingredients
1/4 c Butter
3 bunches Scallions
1/2 ts Salt
1/2 ts White pepper
2 1/2 c Chicken stock
8 Whole button mushrooms, stems removed
5 oz light cream

1 dash Cayenne


Instructions
Melt Butter. Add onions, salt and pepper. Saute' 10 minutes, add stock and bring to a boil.
Lower heat, cover and simmer for 10 minutes. Add half the mushrooms and let simmer for 1 minute. Puree in blender/food processor until smooth and return to pot Add 15% cream and heat gently. Drop in remaining mushrooms and cook slowly until tender. Serve in a warmed bowl with a dash of cayenne (or paprika) for color.
