Favorite Buttermilk Uses?

I needed a cup of buttermilk for a cornbread recipe the other day, & hubby brought home a half-gallon of it. Since the expiration date is 3/31 (like, today - lol!), was wondering what favorite uses some folks have for it that I might employ in the next week or so. :)

Wow...there are lots of things that I use buttermilk in. Biscuits, pancakes, buttermilk pie, mashed potatoes, red velvet cake, as a marinade for fried chicken or country fried steak, you can even use it to make homemade ricotta cheese.

Mashed potatoes, Mama? I never heard of that but it sounds great! Do I just replace the milk with buttermilk?

I love cooking with buttermilk -- although the thought of drinking it makes me gag. Here are some recipes I've posted using buttermilk, and a couple of others I don't think I've posted here before.

Moist Chocolate Cake

Buttermilk Lemon Pound Cake

Buttermilk is an essential ingredient in pancakes and waffles, as far as I'm concerned:

BUTTERMILK PANCAKES

1 egg
¾ cup buttermilk
2 tablespoons melted butter (cooled)
2 tablespoons sugar
½ teaspoon salt
½ teaspoon baking soda
1 cup flour
½ cup fresh or frozen blueberries (optional)

1. Beat egg in large bowl with wire whisk until well blended.

2. Add buttermilk and mix well

3. Add melted butter and mix well.

4. Add sugar and salt and mix well.

5. Add baking soda and mix until just blended in.

6. Add flour and mix until just blended in; batter will be lumpy.

7. If batter seems rather thick, add a little buttermilk to thin it.

8. Add blueberries, if using.

9. Heat griddle or large frying pan over moderate heat, and grease lightly.
Use about ¼ cup of batter for each pancake, turning once only.

Serve with warm maple syrup.

Makes about 8 pancakes.

BUTTERMILK WAFFLES

2 eggs
1 cup buttermilk
½ cup melted butter (cooled)
1 1/3 tablespoons sugar
1/3 teaspoon salt
½ teaspoon baking soda
1 1/3 teaspoons baking powder
1 cup flour
¼ cup milk (if needed -- or use more buttermilk)

1. Beat eggs in large bowl with wire whisk until well blended.

2. Add buttermilk and mix well

3. Add melted butter and mix well.

4. Add sugar and salt and mix well.

5. Add baking soda and baking powder and mix until just blended in.

6. Add flour and mix until just smooth; do not over beat.

7. If batter seems rather thick, add a little milk to thin it.

8. Bake in hot waffle iron until crisp and golden.

9. Serve with warm maple syrup and strawberries, if desired.

And finally, try making mashed potatoes without butter -- add a little salt and pepper and just enough buttermilk to obtain the desired consistency. Excellent flavor, good texture, and far more healthful than adding a stick of butter.

Yep FM that's what I do. For a really special treat, cook and crumble up some bacon and saute some onions in the bacon drippings and add the crumbled bacon and sauteed onions to the to the potatoes...YUM!

Other than pancakes, waffles and biscuits, I generally soak chicken in seasoned buttermilk before frying. Works pretty good with frog's legs, too.

I'm with Vera here butter milk and Frank's Hot sauce is a great way to soak chicken, frog's legs or anything that needs a bit of marinating and you want a bit of heat with. I also use it in biscuits, pancakes etc. Can't drink it but do like to use it to cook.
