No clue what dinner will be. I still have pain in my finger. So I won't be cooking. Sometimes I just feel like I can't get a break.

Doctor said I have a pretty bad infection in my finger. Wants me to see hand specialist if the infection doesn't start to clear up quickly. He's worried about the joint.

I'm curious to know exactly what's going on there.
It could be several things.

Slight change of plans here.
I was going to make the pineapple meatballs that I posted in the beef forum, along with buttery/ parmesan bowtie pasta.

-Now it's going to be shells, Italian sausage in Classico creamy tomato sauce.
Perhaps garlic bread too.

I think you need a break too. You've just had a lot to deal with lately.

I cooked hamburgers last night and had a leftover patty. I think I'm just going to crumble that patty and make some beef nachos with cheese and a half of an avocado that I had left from the salsa from the other night.

Probably won't be great, but whatever. I've been in a lot of whatever moods lately.

I used the bone part of a prime rib, marinated it in a bulgogi mixture, then braised with the marinade and some beef stock, then shredded, defatted the braising liquid and tossed the meat with it. Korean cucumber pickles I made a few days ago and a Korean type macaroni salad similar to what we sometimes get as a banchan in a restaurant. We were supposed to have bibb lettuce to wrap the meat in, but it didn't make it home I discovered right before dinner. I did have a few shiso leaves that were sort of big enough so I picked them.

Had a pi$$y and Moody supper.
I wanted hot dogs with chili, and I was told that I opened the package 3 days ago, and I may have put them someplace in the fridge hidden.
i TRIED TO EXPLAIN I NEVER TOUCHED THEM....
SOooooo..... I had a can of pickled herring and a roll instead. Then all of a sudden
Blaap* Tina found them. ..... I think I said something that irritated Tina and DD.
I said...... "Someone doesn't know how to run a kitchen!"....And it ain't me!"

Went back to the doctor yesterday for a "follow up" visit for my finger. He said it's not spreading and looks better. So long as it keeps clearing up I won't need to go to a hand specialist.
Do you remember when a "follow up" visit especially within a week or less of the original visit was free?
NOT ANY MORE!

BTW I have notice that since my state started opening things up (June 15) gas prices have jumped 30 - 40 cents a gallon!

Last night I had 3 appetizer size clams casino and a spring mix salad with Ken's Caesar dressing for dinner last night.

No clue what dinner will be. Maybe a repeat of last night.
Other choices are Instant pot roast/stew or corned beef (I love the IP because it keeps the house cool). Or maybe rigatoni under tomato sauce with meatballs and/or braciole from the freezer.

Quick tip: I have been chopping/prepping all my fresh rosemary, thyme, sage, garlic, onion, parsley, oregano and basil in my Braun mini food processor (love that thing) ahead of time. Nothing added to the herbs/spices. Whatever I don't use for the dish I spread each individually in a thin layer in a snack size zip top bag. Push all the air out and label bags. I place bags flat in freezer. When I need some for another dish I just snap a piece off and the bag goes back in freezer for next time. Really saves time and money. No forgetting the unused in back of fridge and having to throw it away when it goes bad. I used to buy the frozen Dorot brand cubes but that gets pricey and they add stuff to the herbs/spices.

Good news on the finger, Peeps.

The other night I had grilled 2 steaks out of the 3 pack.
So I've got one in the fridge to reheat for dinner tonight. Not sure of sides.
Maybe mash again with steamed green beans or asparagus.
