Got this recipe from a supermarket magazine. It was great and I'll make it again!

I had ground turkey.

Chicken or Turkey Meatballs Piccata

1 pound ground chicken or turkey
12 oz. pasta (I used about 8 oz. of small shells)
1/4 cup Italian bread crumbs
1 egg
1 tsp. garlic powder
9 oz. bag baby spinach
olive oil
juice of 1 lemon
1/4 cup capers

Mix together egg, bread crumbs, garlic powder. Mix in ground meat, season with S&P. Form mixture into 1 inch meatballs.

Heat a little olive oil in a non-stick pan. Brown meatballs on all sides, turning very gently, as they are fragile! Transfer browned meatballs to a plate.

Cook pasta. Reserve 1/4 cup pasta water and drain.

In the same pan that you browned the meatballs, heat a little more olive oil. Add in spinach and cook until just wilted. Stir in lemon juice and capers. Add the meatballs back in, cover and cook until the meatballs are fully cooked, about 5 minutes. Stir in reserved pasta water and the pasta. Mix gently. Taste for seasoning (I like to squeeze in more lemon juice and add a few more capers to top it off).
