Man, these 12-14 hour days are kicking my ass. There simply is NOT enough time in a day…..nor enough time for sleep. Oh well.

So, late night here, decided to do rotisserie Cornish Hen. It’s on now. Yeah, that’s right, it’s nearly 10 PM and I’m still cooking dinner. CARP!

Well, here’s how she looks so far after 15 minutes. Should be done in about another 30 or so.

I’m using a Toaster Oven. It’s a decent sized unit that cooks a LOT of stuff for us (we only cook for two). There’s not much we can’t make in it, and it has a rotisserie. We don’t use the rotisserie that often, but it is cool.

that looks good!! what make and model toaster oven is that? i want one of those. i would love to do a rotisserie chicken in my toaster oven.

Keltin, DH and I eat at different times of the night constantly. Either we're not hungry at 6 so we eat at 9. Son works some nights and eats whatever, whenever. If he's home I try to get us to eat together. But at 19 he goes when he goes. LOL

You're dinner is looking good!!

It looks a LOT like this one. Same concept. We simply love the thing. It’s big enough for most of our casserole dishes and does rotisserie. I think full size chicken would be too much for this, but a Cornish Hen or Pork Loin roast is perfect.

I also have a George Foreman rotisserie that I use for full chickens and turkeys.

Don't know about that one, but up front, I'll tell you the electonic face bothers me. Mine has knobs, and analog (knob) controls just seem to last a LOT longer. I'd stick with knobs if possible just for longevity.

Ok, here’s the done deal. Finished from the rotisserie. Rested 5 or so minutes. Cut into pieces, then plated with fries. Quick and simple. Had two bowls for dipping. One was ketchup for the fries, and the other was 1 part Franks Hot Sauce mixed with 1 part melted butter – OMG I love that stuff! All in all, not bad for a quick little throw together that took little attention on my part.

I’m so ready to nod off now! :lol:

Come to think of it, this might make a good appetizer platter for a bigger crowd?

It's amazing, Keltin! And thanks so much for telling us about the dipping sauce you made with butter and Frank's hot sauce - I would never have thought to combine the 2 but when you describe it, I can tell instantly that it would be a wonderful combination. Guess what's on my shopping list now?

I think Euro-Pro is sort of an umbrella brand meaning they don't have their own factories. However, I have several Euro-Pro appliances - an iron and a second sewing machine come to mind immediately - and I am very pleased with both of them. I would Google this oven and look for reviews to help you make your decision. HTH

The 50/50 Franks to Melted Butter is, hands down (IMHO), one of the BEST dipping sauces for wings and roasted chicken. You MUST try it.

To die for (but it does have Frank's subtle heat, so you have to like that heat as well).

Ok, here’s the done deal. Finished from the rotisserie. Rested 5 or so minutes. Cut into pieces, then plated with fries. Quick and simple. Had two bowls for dipping. One was ketchup for the fries, and the other was 1 part Franks Hot Sauce mixed with 1 part melted butter – OMG I love that stuff! All in all, not bad for a quick little throw together that took little attention on my part.

I’m so ready to nod off now! :lol:

Come to think of it, this might make a good appetizer platter for a bigger crowd?

Keltin, seriously.. that birdy looks positively mouth watering, I can almost taste the flavours and it just falling off the bone.
The fries look crisp and delicious.
The plate is a perfect presentation.

Come to think of it, my father always mixed butter with some kind of BBQ sauce when doing a rotisserie chicken. And that was long before Buffalo wings came about.
