Chicken Cutlets in a White Wine, Artichoke, and Tomato Sauce:

The sauce for this was based on Giada's sauce for Chicken Vesuvio.

Pound chicken tenders to uniform thickness, season with black pepper and Lawry’s Seasoning Salt, dredge in flour, and brown in olive oil and butter. Remove chicken. Add garlic. Deglaze pan with white wine. Add chicken stock, dried oregano, and dried thyme. Reduce. Add artichoke hearts and seeded tomatoes. Allow to heat through. Add frozen butter.
I put the chicken cutlets over pappardelle and topped with the sauce.

That looks beautiful!! Are the artichoke hearts marinated?

Not marinated, just artichoke hearts out of the can. The sauce is kind of tangy and would probably be a little much with marinated artichoke hearts.

Vine Tomato and spring mix greens on toasted whole grain bread with mayo, ground sea salt and ground peppercorn blend.

Gorgeous tomatoes--The only tomatoes that look half-way decent here right now are cherry and grape.

I'm loving these tomatoes lately. For off season they are fantastic!

i cannot wait 2 make stuffed cabbage again, joe! i'm a gonna jot that into 1 of my 'foods 2 cook soon' lists

Stuffed tomato (tomato shell stuffed with chopped tomato meat, EVOO, fresh chopped basil, bread crumbs, fresh grated parmesan & romano cheeses, herbs and spices). Baked in 350F oven for 10 minutes then under broiler till top is browned.
