suddenly I have a surplus of . . . . peaches. the rings have been moved to the backest burner.
last year we got a small batch of fresh ripe local peaches and froze 4 qt bags worth. they were so stunning over the winter we opted to get stupid and bought 1/2 bushel of chin drizzling peaches - big ones! boootiful!
sorted through and pulled out any with bruises, etc. for immediate attention and processed them + some - I'd guesstimate about 25%.
using a heaped 2 cup measure into quarts bags, ten in the freezer.
I'm gonna need peach recipes . . .
here's a funny - I keep my knives sharp. using a 5 inch paring knife to slice the peaches off the stone...yeah - sliced a finger. bandaged that up, then took another snip out of the same finger with the point.
so after all the hoopla keeping the knives sharp, went searching the junk drawer for a dull knife....
