Citrus-Marinated Mushrooms
Serves 6 - 8
Ingredients
1/3 c. rice vinegar
2 TBL sugar
2 TBL fresh lime juice
1TBL (low sodium) soy sauce
3/4 tsp. crushed red pepper
1/4 tsp. salt
4-5 garlic cloves, very thinly sliced
1 tsp. orange zest
1 TBL extra - virgin olive oil
1 1/2 tsp. dark sesame oil
1/2 tsp. lime zest
1 1/2 lb. medium button mushrooms, halved
2 tablespoons chopped fresh parsley
Preparation
Combine first 7 ingredients in a small saucepan. Bring to a boil; cook 1 minute or until sugar dissolves. Remove from heat; stir in orange rind, oils, and lime rind. Combine vinegar mixture and mushrooms in a large bowl; toss well to combine. Cover; refrigerate overnight. Add parsley; toss to combine.
