Looks like a keeper, Sass !:a1:

If this weather keeps up, there could be opportunity for one more "Souper Tuesday" ...:tiphat:

But... only 12 oz. Beef Broth ??

It was wonderful and so easy.
My DIL had had if before as her Mother made it.
She said mine tasted different and better.
May be because I didn't drain the beans.

All that liquid holds a lot of flavour and made more soup, plus I used some beef broth from the freezer. Just skimmed the fat off after thawing and dumped it in.

I'll definitely be making this again.
Lots today left for lunch.

I had just under that in the freezer container.
I think the beans liquid added hella flavour.

How does this flesh out ?? (I added chopped onion...)

EASY TACO SOUP

1 1/2 lbs. Ground Chuck 1 medium Vidalia Onion, Chopped
1 can each,
Pinto Beans
Black Beans,
Kidney Beans
Whole Kernel Corn

Drained and rinsed

2 cans Diced Tomatoes, with liquid
1 can Rotel diced Tomatoes, with liquid
12-oz. Beef Broth

1 Packet Ranch Dressing Mix
1 Packet Taco Seasoning Mix

In a large skillet, Brown the beef with the onion...
Drain, place in a Soup Pot.
Add the canned goods and broth. Bring to the boil and reduce heat.
Dissolve the dry ingredients into the soup.
Simmer for 20-25 minutes to marry the flavors.

Holy crap! I can't even stand the "mild" Rotels! And fire-roasted tomatoes, too??

Sass, did your grandchildren eat the soup?

OOPS ! Didn't mean to grab the Fire Roasted.... THX ! I probably would have opened the can and THEN noticed.

The Fire-Roasted goes into salsa. And, since I first found them (Hot), I don't use either of the other Ro-tels, although I noticed last shopping trip that Ro-tel markets a fire-roasted version, which I might utilize in future...

Yes they did.
It wasn't overbearing or spicy at all.

I've got all the key players ready to go.
I'll brown and drain the ground beef, then add the rest.
I'm doing this in the slow cooker on low.
