Confetti Grits

Serves 4

1/3 c diced red and orange pepper
1 green onion, sliced, another for garnish
grilled ear of corn, kernels removed
2C water
1/2 c grits
1 oz cheddar
S&P
1T butter

Saute vegetables in butter till soft. Add water, bring to a boil. Slowly add grits, return to a boil, then lower to simmer for 20 minutes, stirring often. Add cheddar after 15 minutes. Season to taste with S&P. Spoon onto plates, sprinkle with remaining sliced green onion.
