Prosciutto, Tomato & Bocconcini Salad

250 g/ a little more than 1/2 lb cherry-sized bocconcini cheese (halved)(fresh mozzarella works here as well)
2 pkgs cherry tomatoes (halved)
1/2 cup olive oil
2 T balsamic vinegar
1 T lemon juice
1/4 of a red onion, thinly slived or
2 diced garlic gloves
6 slices prosciutto
6 or 8 basil leaves (chopped)
salt and pepper to taste

Place sliced tomatoes, cheese, onions, and basil in a bowl.

In a separate bowl, whisk olive oil, vinegar, lemon juice, and salt and pepper.

Pour oil mixture over tomatoes and cheese and toss.

Preheat oven to 300 F

Place prosciutto on a lined baking sheet and heat in the oven for 5 to 7 minutes or until brittle. When cool, break into pieces.

Top salad with prosciutto pieces and serve.
