1/2 package baconI use about 3/4's of the package)
1 pkg cream cheese
1/2 cup mayonaise
2 cups shredded sharp cheddar cheese
1/2 bunch of green onion- chopped
1 cup cracker crumbs ( i process them in my food processor)
Reserved bacon drippings
"Scoops" or your favorite cracker
Fry bacon until almost crispy and set aside. reservesome drippings for later.
Mix softened cream cheese and mayo well. Add tbls of bacon drippings and mix until creamy.
Add cheddar and onions and stir with wooden spoon.
Pour into 8x5 baking dish
In food processor , process the cracker crumbs with the bacon and 1 tbls of drippings. Blend until bacon is pea-sized. Scatter evenly over the cheese mixture in pan.
Cover with foil and bake at 350 degrees for 20-25 min. Serve hot with your favorite crackers.
