bacon garlic spinach

1/3 pound bacon
2 cloves garlic
2 bags fresh spinach
1 small sun dried tomato or roasted tomato
1 cup good olive oil
1 tbl balsamic vinegar

grind or grate the tomato,add oil& balsamic vinegar & jar or bottle -set aside for a day or two.

fry bacon & garlic together in a large cast iron pan-drain & set aside

add about 1/2 inch of water to the still hot pan & blanch the spinach-drain

mix the spinach & bacon/garlic together in a bowl then drizzle the oil over the top-toss & serve.

the sauce is also good for an italian bread dipping sauce w/ red wine
