Grilled Salmon Dressing

Here's one that I used to make years ago up in Michigan. It's unbelievably good, especially on the salmon! Be advised this is a commercial yield. You'll want to scale everything down for home use.

Grilled Salmon Dressing
Yields: 1 ½ gal

5 c seasoned rice vinegar
7 c olive oil
5 c honey
1 ½ - 2 c pesto
¼ c white seasoned salt
3 c roasted pecans, cooled and chopped

Combine the vinegar, oil, honey, pesto, and seasoned salt in the Hobart stand mixer and mix on Medium (2) for 5 minutes, or until emulsified. Add the pecans and stir briefly.
This dressing should be a bright green color. Stir this dressing before pouring into a container, and stir before serving, to ensure even portioning, as the pecans will float to the top.
