California Chinese Cole Slaw

This is SO delicious, that I have to bring copies of the recipe wherever I take it.

Goes great with BBQ!

California Chinese Coleslaw

1 head grated cabbage ( I now buy bagged cole slaw)
1 pkg. (3/4 cup) slivered almonds, toasted
8 green onions, chopped
2 pkg. Ramen noodles, uncooked, broken into pieces
1 pkg. (1/2 cup) sesame seeds, toasted

Dressing:
1 cup oil (not olive oil)
½ cup sugar
6 T. Chinese white vinegar
dash pepper
dash garlic powder
couple of dashes of soy sauce
(you can use the noodle seasoning packet in the dressing if you wish)

Leaving out oil, heat the other dressing ingredients until sugar melts. Add oil and cool.

Mix grated cabbage and green onions.

Toast almonds and sesame seeds separately, since the almonds take longer. Combine with the dried broken noodles.
To prevent sogginess, toss everything together just before serving.

This looks good.... similar in some ways to the Danny Gaulden recipe I posted. Will have to give it a whirl. I prefer the vinegar slaw to the creamy

That looks pretty tasty, Lee. And I love the different textures.
I'll have to look for that Chinese vinegar.

Made more of this, using bagged cole slaw mix I bought at the store. EVEN EASIER!

I love the slaw the first night I make it, when the Ramen noodles are still crunchy. But it's still delicious when it's left over and the noodles are softened.

You could also use rice noodles. Break them into pieces. Put some oil in a skillet and heat it up then toss some in. The noodles will puff up and add a nice crunch to the salad.

This time, I made it even easier!

Again, I used a package of store-bought (dry) cole slaw, cut the recipe in half, and this time, used 1/8 cup of mirin instead of sugar. No microwave - just add the wet ingredients in a jar and shake.

Wa-la! Done!

Oooo! Very similar to mine, Johnny! I love the idea of using bok choy instead of regular cabbage!

I have two excellent Asian supermarkets in my town, so Asian ingredients are plentiful and cheap. They bag baby bok choy in a big bag, so when I make wonton soup, I always have lots of bok choy leftover. I do like roasting the little bundles, but I am going to try it in my California Chinese Cole Slaw recipe next time!

LOL! Andy, you really DO have to ditch the "auto correct"!

I use canola oil for the slaw.

I think next time I'll use white or Spanish vinegar and more mustard for a bit more pizazz, otherwise it was excellent.
