Potato Bake (Moussaka style)

I work by eye so not all things are measured. It is alos a recipe to amend as you want and adjust seasonings to your taste. This was a little acid so could reduce the tomato puree.

4 small onions
2 cloves garlic
Green Pepper
1 lb minced beef
10cm of butternut squash
ground ginger
paprika
cup of red wine
tin of tomatoes
tomato puree
2tbs sugar
oregano
basil
salt & pepper
5 large potatoe
Large carton natural yoghurt
1 egg
200g grated cheddar

Chop & fry the onions & garlic
Add chopped green pepper, salt, ginger & paprika
When softened add the minced beef and stir until browned.
Add chopped butternut squash.
After a few muniutes, add wine, tomatoes, tomato puree and sugar.
I also added a little Worcester sauce at this point (mistake)
Simmer until sauce is reduced and thickened.
Meanwhile, peel & slice potatoes.
Parboil the potato slices.
Then in deep oven dish layer the potatoes & sauce. Start & end with potato.
Mix the yoghurt, egg and cheese.
Pour & spread over the top.
Bake in hot oven until browned.

Boy that looks great, Ray.
I don't think I've ever seen anything topped with plain yogurt.
I'm going to be making this.
