Beggar's Purses

12 crepes – homemade or store-bought
12 chives or green onions
Extra chives, minced – for garnish (optional)
1/4 cup crème fraîche or sour cream
3/4 cup caviar, chilled (about 7 ounces)


Dip the chives/green onions in boiling water for 5 seconds. Place under cold water and place on paper towels.


Place 1 teaspoon crème fraîche and 1 tablespoon caviar in the center of each crepe. Pull up edges of the crepe toward the center until they meet. Make small pleats all around the top of the crepe/ purse where the crepe edges meet. You'll have a ruffle at the top.


Tie a chive around the top to secure each crepe/purse. The beggar's purse should look like a small purse or sack, with the chive as the tie string.


Continue making purses in the same manner until 12 purses are made. Brush the top of each purse with a little melted butter, if desired.
 
A few more ideas... You can fill the "purses" with smoked salmon & cream cheese, mushroom duxelles, or any ingredients you have on hand.

The ready-made crepes can be found in the produce dept., usually next to the strawberries. They make a great easy dessert, as well. Use your imagination for fillings, & have fun with it.
