crunchy onion rings

I made the best onion rings tonight!! :) Here is the recipe as I found it, I will add my 2 cents worth as I go:

1/2 C flour (plus more for dredging)
1/2 t cayenne
1 C club soda (I used ginger ale)
1/4 C corn starch (I used corn meal, not sure if they are the same thing or not)
2 T instant mashed potato flakes
1/2 t dried thyme (I omitted this completely)
2-3 C Japanese bread crumbs (I used italian bread crumbs)
2-3 medium onion cut 1/4 inch thick and seperated into rings
canola oil

In a shallow bowl, wisk together flour, cornstarch, instant potatoes, cayenne and dried thyme.
Stir in club soda. Alow mixture to sit while cutting onion. Mixture will thicken.
Pour breadcrumbs in a shallow dish. Pour dredging flour into another shallow dish. (Imiss-read the instructions and put them both in the same dish and it was fine, but a little clumpy towards the end). Fill heavy bottomed pot with 2" canola or vegetable oil and heat to 365-370.
Dip onion ring into flour, then in batter, then in bread crumbs. Drop onion rings immediately into oil and brown both sides, about 2 minutes. Sprinkle with salt as soon as you remove them from oil.

yum, blondie- onion rings can be a great change from the usual fries.

Blondie, cornstarch is a fine white powder, not the same as corn meal.

But you made it work! LOL!

Your recipe might even be BETTER than the original! Good going!

Come on April!!!!!! (That's when Vidalia onions hit the stores :w00t:)
