Yum Sass. I love rye toast to dip in eggs.
Breakfast was my last yogurt. LOL
Will be going shopping so not sure what dinner will be. Maybe homemade calzones. Lunch will probably be rotisserie chicken and some salad.

It turned out to be breakfast lol
DIL ate all of hers.
Now I've ham steak pieces left for lunch tomorrow.
This is probably the most I'm going to have eaten today.
Probably a simple salad and fruit for dinner.

I use lots of butter and move the spatula carefully under the white once it starts to cook.
Then just keep going under until it's right, then flip!
Many a yolk I've broken.
I actually cringe lol

Before my arthritis and carpal tunnel got bad I did the free style flip in the air. Only missed once. LOL

I always make my eggs sunny-side up the Chilefarmer way now.

Break them into a Pam'd non-stick pan. Set heat to high. Cup some water in my hand and throw it on top of the eggs. Cover with a glass lid.

Watch the eggs until the whites are done and there is a white film over the yolks. DO NOT WALK AWAY, as this goes quickly!

Remove cover, salt and pepper .... perfect every time!.

Eeks, it wasn't tilapia that was in the freezer, it was Alaskan pollock, but I made it the same way.
Right in the pan with butter, med heat few minutes each side - then season.
The sides are the Knorr pasta/rice blend and green beans.

I think I have made them his way a few times now that I think about it.
I did baked eggs too in quite a few different ways.

I don't have a clue where he might be.
Some folks belong to many cooking forums, so it's possible he'd be on one of those.

Son & Sam took me to The Roadhouse yesterday.... I had the Smothered Chicken.... Fried Dills for the Appy.... forgot to take my camera...


I had chicken defrosting, so I'll use that today...

My lunch - the last of my beloved chicken salad (I'll get more) on toast and pickle chips!

Now I'm not sure about dinner plans.
I'm going to babysit the wee ones later for a few hours, so may eat there, here or anywhere.

Had yogurt for breakfast.
For lunch I had Half a mother goose liverwurst on hard roll sandwich and a bowl of chicken soup.
It’s been rainy and dreary for days.
I have a chuck roast which may be dinner (either soup, stew or pot roast TBDL). I may just make the soup. Whichever way will be cooked in the IP.

Myself and DIL ate here in the city at Azul Tequila.
I got Fajitas Tropicale---- grilled chicken, shrimp, onions and pineapple.

Last Night's Fare.........
I attempted the Flour- Egg- Panko last night, her department...


Call it Panko-Crusted Chicken Breast Medallions & Rice with a Teriyaki Drizzle,

Dilled Carrots and Tomato Slices...


When I brought the Breast, I split it in half, rolled the halves and put each in it's own Freezer Bag... When I defrosted the first one yesterday, it retained the roll shape. I sliced it into Medallions, did the Warden's wet hand-dry hand thing and put 'em on an oiled wire grid over a foil-lined baking sheet.


Into the oven (425).
The Chicken was done in 12 minutes; the Panko could have used a few minutes more... or maybe she sprays the Panko a bit to help it brown...
I plated the best side up; the other side is "Pale Rider"...



Plating is a bit messy, but that's because I let Jose' help...:margarita:

Dinner..
Crusted fish (pollock) and cream cheese and chive skillet corn.

I made the crusty goodies for the fish by dipping in melted butter first, the crushed saltine crackers seasoned with basil, oregano and garlic powder.
Bake at 350 for 25-30 minutes.

We liked it!
