Egg and Potato Sub

As I've said before, there is a sub shop on every corner in my area.

On almost every menu, there is an Egg and Potato sub. I've never tried one. Might be a New York thing.

But I had part of a loaf of French bread and two leftover baked potatoes, so thought I'd try my hand at one this morning.

Kinda bland, so I put some ketchup on the bread. I will keep trying. Maybe next time, cook the onions less.

Anyone ever make these? Suggestions?

Egg and Potato Sub

1 T. olive oil
1/2 baked potato, cubed
3 T. thinly sliced onion
2 eggs, whisked and seasoned with salt and pepper
hunk of French bread

Heat oil in a small non-stick skillet. Add cubed potatoes and brown them a bit. Add onions and cook for a minute. Add eggs and cook until just set. Fold omelet over to fit in French bread.

Try onion, potato, bell pepper and egg. Mom used to make that all the time. Sometimes I will add hot dog coins to the mix. Also some hot pepper paste gives a nice kick or sriracha ketchup.
