Peep's White Pasta Fagioli

4 -5 Servings

  • 1-1/4 lb Sweet Italian Sausage
  • 5 cloves garlic; minced fine
  • 4 tsp Fresh Parsley; chopped fine
  • 3/4 cup Olive Oil
  • 1 (15 oz) can Cannellini Beans
  • 8 oz Ditalini Pasta
  • Ground sea salt
  • Ground peppercorns
  • Ground red pepper flakes

  1. Removed sausage from the casing and place in a large pot.
  2. Brown sausage breaking it up into small pieces.
  3. Drain sausage and place back in pot.
  4. Add olive oil, garlic and parsley and sauté till garlic smells fragrant.
  5. Add the undrained cannellini beans .
  6. Season with sea salt, peppercorns and red pepper flakes to taste.
  7. Simmer while you cook the ditalini.
  8. Cook ditalini in salted water to preferred doneness.
  9. Add 1 cup of the pasta cooking water to the sausage and bean mixture.
  10. Drain pasta and add to the sausage and beans; stir well.
  11. Serve while hot topped with grated romano and parmesan cheeses.

I am thinking too, this may make a great kind baked ziti style dish.

Baked ziti? You mean add ricotta, mozzarella and tomato sauce? You can add those to the finished pasta fagioli and place in a baking dish topped with more cheese and bake. It may taste a bit strange with the beans but should be good.
