Peep's Chicken & Vegetable Stir Fry




4 servings
  • 2 Boneless/skinless chicken breasts
  • EVOO
  • 1 large clove garlic
  • Ground Sea salt
  • Ground peppercorns
  • 3 carrots
  • 1 - 2 broccoli crowns (depending on size)
  • 1 (10 oz) box mushroom caps
  • 1 small onion
  • 3/4 cup chicken cooking stock
  • 3 tsp cornstarch
  • EVOO
  • Ground Sea salt
  • Ground peppercorns
  1. Cube the chicken breasts.
  2. Toss chicken with enough EVOO to coat.
  3. Chop garlic clove and add to chicken, season with salt and pepper and mix well. Set aside.
  4. Peel and slice carrots on the bias.
  5. Cut broccoli into spears.
  6. Quarter mushroom caps.
  7. Slice onion from root to stem.
  8. Mix cornstarch with stock and stir to dissolve. Set aside.
  9. Heat heavy pan and add EVOO.
  10. Add chicken and stir fry till chicken turns white.
  11. Add the vegetables and season with salt and peppercorns to taste.
  12. Continue to stir fry till chicken is cooked through and vegetables are tender firm.
  13. Add cornstarch and stock slurry and stir till thickened.

do you have the recipe for the Pilaf?
LOL I am working on it now. I jotted down the ingredients as I went along. I just ad libbed it as I went along so I have to remember everything and flesh out the measurements. Stand by I will post it shortly.

looks good peeps I just bought some broccoli crowns and have some chicken in the refrigerator. Maybe it's time to make stir fry, which I haven't made no over a year.

Can't get your link to work for the pilaf, I'd like to see that recipe looks interesting. Any chance you re-post the recipe please

thanks peeps looks like an interesting dish with great color I would imagine the broth adds to the flavor too. Thanks for the recipe
