Strawberry Yummy Cups...

1 Quart strawberries
2 T Sugar
8 oz. Mascarpone cheese
30-45 Filo cups (the brand I buy comes in a box of 15)

Set one strawberry aside for garnish. Let Mascarpone cheese come to room temperature. Trim and coarsely mash remaining strawberries, and stir in sugar. Let strawberries set in fridge for an hour or so until syrup forms. Cut one strawberry in half lengthwise, and then slice thinly into enough slices for each cup. Dust these slices lightly with sugar. Mix cheese into the strawberries thoroughly with hand mixer or beater. Spoon strawberry-cheese mixture into cups, and top with a garnish strawberry. Chill for an hour before serving to allow flavors to come together.

This is an original recipe that DW and I made yesterday. We made 30 cups, and there was a lot of filling left over which was used for apple dip. DW's aunt asked me what they were called, and I told her that they didn't have a name, and I left it to the crowd to name them. Our daughter came up with the name. :mrgreen:
