Cincinnati Chili

This is the basic recipe we started out when we first tried this. It is served over noodles and topped with onions and shredded cheese, some put red beans on it as well.

2tbsp vegetable oil
2 cups diced onions
3 cloves minced garlic
2lbs ground beef
2tbsp chili powder
1/4tsp ground cinnamon
1/4tsp ground cloves
tsp cumin seed
1/2tsp powdered mustard
1/2tsp ground nutmeg
1/2tsp paprika
2tsp salt
2 6oz cans tomato paste

Heat vegetable oil in pan and add onions and garlic, saute until soft. Add in the ground beef, if need be break it up with a wooden spoon so it is nice and crumbled no large chunks. Dump all the spices on in and cook until the ground beef is fully cooked and the spices worked in. Stir in the tomato paste and bring to a simmer. Mix in one cup water and let simmer for about 4 hours or so.
You can use a bit less water for thicker chili or a bit more for thinner chili. Also if you like a stronger chili you can add in more chili powder. We like to add a pit of PickAPepper (a little milder than Tabasco) or some Cayenne pepper.
Serve as is in a bowl or over noodles with diced onions and shredded cheese on top.
