Corned Beef and Guiness in crockpot

A couple of friends and I planned on going out to a local pub to celebrate St. Pat's Day this past Saturday, so I wanted something easy to fix.

Laid a corned beef flat in the crock, slathered with stone ground mustard, sprinkled with the spice packet that came with the beef, and poured in a pint of Guiness. Set on high for 4 hours.

Magnificent! I was so pleased that it was nicely sliceable, not shredded.

I loved it and will definitely do this again!

Took off the fat, made a Reuben with doctored sauerkraut and homemade Thousand Island Dressing on marbled rye. Perfectly perfect!
