I saw this recipe on FB and just had to try it. Really good and will make it again.
Ingredients:
1 head of cauliflower, cut into bit size pieces
6-8 strips of bacon, cooked and crumbled
6 T. chopped chives (I used scallions)
1/2 cup mayonnaise
1/2 cup sour cream
2 cups Colby-Jack cheese (or cheddar if you prefer), shredded
3/4 cup mushrooms, sliced
Preparation:
Preheat oven to 425F
Boil water in large pot and add cauliflower for 8-10 minutes, drain and cool. (I steamed mine in the microwave)
In a large bowl combine mayonnaise, sour cream, half of crumbled bacon, 3 T chives (or scallions), 1 cup of cheese, mushrooms, and cauliflower...mix well. Place in baking dish and cover with remaining cheese and rest of bacon.
Bake for 15-20 minutes until cheese is melted. Top with remaining chives (scallions) and serve.
