Since Dogboa smoked the speck, we decided on this https://barbecuebible.com/recipe/smoked-shrimp-corn-chowder/ for dinner. We did vastly decrease the time the shrimp smoked and cooked in the chowder because it seemed quite excessive, but did increase the corn cooking times. The chowder was very good, surprising depth of flavor for such short cooking time, a definite make again.

When I make moussaka, I always make 2 dishes and enough extra sauce for 2 meals. This is the second dish from the freezer with fresh made tzatziki.

Wednesday night's dinner was spatchocked cornish hen, wild rice, and creamed spinach.

So far.....for tonight, we got a cubed tomato salad, with minced garlic, oil, water, sugar, and oregano. A splash of Vinegar and lightly salted.
And.... A loaf of Italian Bread from Anthony & Sons Bakery, to sop up the juices of the salad. With a bunch of fried meatballs, I would call it a meal.

Boneless/Skinless chicken breast (seasoned and seared in cast iron pan then pan went into oven on convection roast for 15 minutes), mashed sweet potato (cut in half, unpeeled, 15 minutes on steam in Instant Pot, skin fell right off, mashed with butter, splash blackstrap molasses, pinch brown sugar and dash maple extract), stuffing and pan gravy. Dinner was cooked in under 30 minutes.
